A kitchen‑laboratory with deep roots, tradition, local heritage and a contemporary outlook
While many places are emptying out, some choose to stay—or return—to the Madonie. We work with them: we listen, select and tell their stories. Our goal is to give new voice to timeless flavors, without altering their essence.
Commitment, relationships, and authenticity: this is where MadoniEAT is born.

MadoniEAT at Palazzo Butera
A project celebrating the real Sicily
Since 2018, we’ve been bringing together food, culture, and local traditions in one of Palermo’s most iconic spaces of renewal.
We tell the story of the island beyond the postcards: the pastures of the Madonie mountains, the small family-run farms, the slow, careful work, and the genuine effort behind every product.
Our mission
To support and showcase producers from the Madonie: people who grow, raise, and craft their products with respect for the land, preserving age-old knowledge.
We select them carefully, follow their journey, and bring their creations to your table—and into our shop—so that every purchase is also a meaningful act.
Sicilian Supply Chain
We buy directly from producers
No middlemen: we visit the fields, dairies, and workshops ourselves.
We know the people, see how they work, and select products at the perfect moment.
This allows us to guarantee real quality, full traceability, and organic ingredients that truly taste of Sicily.
Sicilian Villages
Madonie + Eat
We have an intimate knowledge of the Madonie villages, many of which are ranked among Italy’s most beautiful, steeped in history, tradition, and culinary culture. Every street and local celebration tells the story of northern Sicily’s authenticity. From Gangi to Geraci, Castelbuono, Cefalù, and Petralia Soprana, to smaller villages like Isnello, Sclafani Bagni, Petralia Sottana, Pollina, Polizzi Generosa, and San Mauro, every corner of the Madonie Park offers breathtaking views, pristine nature, and unique local products. It is from these villages that MadoniEAT sources its products, working directly with local producers to bring genuine ingredients to your table—ingredients born from ancient traditions and an extraordinary land.
Our Philosophy: seasonality, quality, respect. Only fresh, authentic ingredients, carefully prepared with no compromises.
Venue
Palermo’s First Exhibition Bistrò
MadoniEAT is a bistro in the heart of Palermo, located in the historic Kalsa district—one of the city’s most genuine and captivating corners. We are housed in the prestigious Palazzo Butera, recently restored by Francesca and Massimo Valsecchi, a noble residence overlooking the sea along the picturesque Foro Italico. If you’re wondering where to eat in Kalsa, MadoniEAT is the perfect choice for an immersive gastronomic experience that blends art and history. We are a true exhibition bistro, where contemporary cuisine meets culture in the heart of the historic center.
Just steps away, you’ll find some of Kalsa’s most important attractions: the Regional Gallery of Palazzo Abatellis, the monumental Palazzo Chiaramonte-Steri in Piazza Marina, and the elegant Palazzo Forcella De Seta, recently acquired by Hauser & Wirth, one of the most influential galleries on the international art scene. Nearby stand Palazzo Lanza Tomasi, a historic residence linked to Il Gattopardo, and Palazzo Trinacria, a testament to the district’s aristocratic heritage. Thanks to its prime location between the sea and the historic center, MadoniEAT is also the ideal spot for a culinary pause after a stroll through Kalsa’s narrow streets or along the Foro Italico—a place where gastronomy, art, and local culture come together in the most authentic heart of Palermo.
